A very interesting and helpful web site. I am intersted in your blonde de flandres snails and also helix pomatia as a small producer of snails as pets rather than as food. This is not a commercial venture as such more as a hobby. I recently bought a pair of helix pomatia on e bay but one died in the post and I now have a lonely snail. As these snails are rare and protected in the UK now do you know anywhere I can buy at least one helix pomatia or preferably a dozen or so? Good web site! Kind Regards brian

Je voulais aussi dire je suis encore qu'une jeune fille de 13 ans mais j'adore les escargots je n'ai pas de matérielle spécifique pour men occuper!Moi en se moments j'ai neuf escargots je n'arrive pas vraiment à les distingues.Voilà donc je les adores c'est une de mes passion (après les chevaux)Je m'en occupe tout les jours (j'enlève leurs excréments et tout les deux jours je les réveille)Voilà répond moi vite!

Bravo pour le site ! Le luma est le nom du petit gris en Poitou. Tous les ans, pour le premier samedi d'Août, à Sainte Radegonde, a lieu la fête aux lumas avec dégustation de sauce aux lumas et animations ( pour tous) près de Chauvigny dans la Vienne

Peut de commentaires sur l'hélix pomatia qui pour nous, sur la côte de dijon à beaune, est le seul vrai escargot de bourgogne, c'est d'ailleurs le seul que l'on prépare et dégustons en famille.....dommage !!!!!!

site excellent petite astuce lorsque vous faites dégorger vos escargots rajoutez des orties fraiche l'avantage c'est que toute la bave reste collée aux orties les escargots restes propres (3 lavages eau orties + sel et un dernier eau orties + vinaigre) vos escargots sont pret à cuire selon votre recette

Nous avons un elevage en plein air depuis huit ans nous ramassons tous les escargots que nous trouvons ailleur pour les ramener sur notre terrain a l'heure actuelle le nombre est incalculable. Cette année nous commencons un elevage fermé car notre voisin les tue ( pas content que ses fleurs soient mangées).Nous vous remercions de tous vos conseils et de la clartée de votre site.

Je reviens de balade, j'ai ramassé 6 gros "Bourgogne" (oui je sais c'est interdit), je les relâche autour de ma maison, au milieu des prés, afin de leur éviter les pesticides. J'aime bien votre site. L'anglais peut etre corrige un peu, mais c'est clair autrement. Merci pour votre renseignements sur les escargot! J'espere peut-etre manger quelques-uns qui poussent, tres simplement, dans notre jardin. Meme que j'habite a Utah, un desert, nous avons un puit chez nous, et les escargots poussent bien ou existe l'arrosement (? irrigation). Les escargot, je sais, sont des immigrants ici, alors il faut faire des recherches a leur espece.

J'aimerais les croiser donc je les ais mis dans une cage. Il n'y a qu'un individu de chaque espèce pour éviter que par exemple 2 petits gris se reproduisent endemble sans l'escargot de jardin. Dire que je suis née à la campagne et qu'à 48 ans, je me demande enfin comment se reproduisent les escargots en voyant mon ami en déguster! merci pour ce site, j'ai beaucoup appris et certaines images sont bien jolies.Je ne mange pas d'escargot, par contre, mon fils aîné avait 4 ans et s'était pris d'amour pour un superbe bourgogne que nous avions nommé Oscar. Il a vécu heureux avec piscine ( l'écuelle basse du chat ), salades, herbe, vaporisations, nourriture etc... tout un été au frais sur notre balcon dans un terrarium grillagé finement dessus...mon fils a eu de longues conversations avec lui, mais comme je ne savais pas si cela vivait l'hiver, nous l'avons remis dans la nature à l'automne où nous l'avions trouvé, avec le coeur gros comme ça...Mon fils a 19 ans maintenant et nous parlons encore parfois en souriant...Nous espérons qu'Oscar a eu encore de belles années devant devant lui et qu'il se souvenait de ses vacances * à la ville * ;-))

Thank you very much for this informative website. I live in Nothern California and we have many snails. My husband claims they were brought by a Frenchman a long time ago and set loose in this area. They are considered to be pests here because they damage our gardens. However, I've been collecting them in the cool morning hours and feeding them to my chickens. After visiting your website, I am considering setting some aside for myself. According to the photos you provide, I believe we have "petit gris." I could use more detailed information about housing and raising them. What book or reference would be most useful to me for such a "backyard" operation? Thanks again for the lovely website. Je suis actuellement adjointe administrative dans une mairie. En septembre 2005, je serai en retraite (et oui) de la fonction publique. Je vous avait appelé début Janvier pour avoir des escargots vivant pour réaliser des photographie sur Paris. Devant l'impossibilité d'en trouver (-4° degrés) j'ai fini par en faire venir de Bourgognes, directement de dessous les haies du jardin de ma mère. Ainsi 24 escargots tout endormies sont arrivés par Colissimo, en parfait état de santé. Photos faites, ils sont retournés par le même moyen sous les haies du jardin famillialle: l'escargot, cela voyage trés bien, mais ils ont la facheuse tendance de manger le carton de la boite postale!!!

In Portugal we don´t eat snails like you. For us they are pests that we try to eliminate, althought in the south there's a kind of small snail, much smaller than your's, that they eat. But here nobody raises them, they're picked from the wild, so they're relativly expensive and not very used. But your site makes us put snails in perspective.

Hi Great website - I want to begin raising snails to feed to chickens . I live in California & we have oh so many many snails that French people brought here a long time ago - now everyone complains about them instead of eating them my daughters and I think they are adorable . But I am not opposed to eating them as I did in Paris on my honey moon and feeding them to chickens as well. I think we will advertise to remove snails for free - take them home from pesticide free enviroments purge them and begin a snail farm - does that sound like a plan ?? I have prepared a small scale outdoor feasibility test plot of producing snails following in my geographical area of the US. Bravo pour votre site. C'est la macro photographie qui m'a orienté vers ces charmantes petites bestioles. Il y a quelques mois, à la recherche de photos insolites, je me suis mis à photographier les gastéropodes de mon jardin. Ainsi, jour après jour, j'ai constaté avec surprise que le nombre d'escargots du type "Petit-Gris" augmentait considérablement. Alors plutôt que d'utiliser des pesticides pour réduire le nombre, j'ai décidé de "parquer" ces escargots dans un coin de mon jardin. J'en ai eu encore plus. Maintenant, je me pose sérieusement la question si je m'orienterais pas vers un élévage d'escargots. C'est ainsi que je suis mis en quête d'informations et que j'ai atterri sur votre excellent site, clair et complet. Aujourd'hui, je possède environ 200 "Petit-Gris" de toutes tailles. Je tenterai un premier essai d'élevage digne de ce nom à partir de l'année prochaine. Cela me laisse le temps de préparer tout le matériel nécessaire. Je pense même que l’idée de les rejoindre est en train de faire son petit chemin dans ma tête ... Pour me conforter dans cette idée, je vais de ce pas consulter la partie « Recette ». Hi there: I live in Canada.....I love your site. It is so informative. Thank you! Would anyone have any information on the regulations in Canada on Snail Farming? The only information I have is from British Colombia Ministry of Agriculture, Food & Fisheries and it is somewhat limited. The only snail cultures allowed to farm in Canada are the Otala lactea, Otala Emulata and Cedpaea Nemoralis. I certainly would be grateful for any information. In English only please. Hi, I am a total novice when it comes to snail farming but I am interested in doing this in Cyprus as a serious business. I hope then to sell them locally and if successful, to export them. Have snales originally from the Ohio River(MID-western USA). Grown in a farm pond. These snales are water snales. The local raccoons eat them and they are great for fishing bait. How can these be prepared for human consumption? I'll try preparing a few using modified instructions on your home page. These can't be left out of the water or they will die. Maybe starve them for a few days in fresh water then age them in salt water? Then do the blanch thing for 3 minutes. Any suggestions?

I have kept snails in a terraniun fed on lettuce andcucumber for two years they are calm and sanguine. I am moving to Eastern Europe next year and perhaps I will farm the snail.

However, there is little or no emphasis laid on the risk, deseases, that snail rearing is exposed to. Is it that they are immune to deseases or they are negligible. Bonsoir, il est 0h15mn. Tout d'abord, merci pour votre site. j'adore les escargots, je peux les admirer chaque année, après l'hiver...en ce moment (Avril 2004) après une ondée. J'en "possède" environ une trentaine (escargot de Bourgogne) peut être plus cette année, ils évoluent dans mes massifs en toute liberté. Je les observe dans leur vie de tous les jours, leurs accouplements sont fréquents en cette période, surtout mai-juin. Ce n’est pas pour les manger, mais tout simplement pour les observer. I have been a snail lover for years and finally made up my mind to create my own snail farm. I live in Hungary and the snail breeding over here is limited to the Helix Pomatia, e.g. I can't use any of these wonderful infos on the Helix Aspersa. I would kindly ask everyone who has information about the basic breeding techniques of the H.P. to share it or send me a link to my email address. Due to the fact that the Helix Pomatia is fairly difficult to breed (as for all the information I managed to find on the net) I want to see if there's any techinques available at all. Voila c'est tres simple j'habite le Chili comme expatrie d'une entreprise d'assurance francaise je suis informaticien donc rien à voir avec les escargots. Mais j'ai comme une une Petite idée derriere la tete de faire une ferme d'esgarcot avec des Chiliens (les terrains sont plus abordable), j'ai trouve votre site par hasard et je le trouve simple et surtout tres efficace. Je constate que pour vous que ceci est une passion. Pour moi je ne la partage pas aujourd'hui...mais apres toutes ces lectures je vais essayer de faire un elevage dans mon jardin. We have a lot of general information about the process, wich we have seen, seems to vary & change according to diferent "specialists". One question has arisen: Garlic is a very efficient natural inmune "activator", do snails eat garlic?, & if so, would that influence their defense mechanism, helping the negative effects of bacteria & accarids??. Tragically, when found in other restaurants escsargot are more like erasers in garlic butter. I need to find a source of escargot, but then, I will use your recipe. Merci !

je suis un amateur d'escargots petits gris de la région j'aime les élever,les ramasser, les cuisiner et les déguster.(800 escargots au congelateur en 2001, 1200 en 2002, j'essaye d'imlanter l'escargot de vigne presque disparu , élevage naturel, pas de parcs, pas d'alimentation autre que les plantes autoctones, ils restent chez moi car ils y trouvent ce dont ils ont besoin naturellement, j'aimerais ausi leur adjoindre quelques escargots de bourgogne, une centaine me suffirait.... pour les ramasser, j'ai ma méthode, je les ramasse par 300 environ, en une fois si j'en ai 200 j'attends le jour suivant, la centaine qui me manque, sinon je les relàche tous. Avec trois cents, c'est suffisant comme travail pendant trois jours, je les réveille chaque matin dans mon bac a eau de pluie et les asperge de farine de blé, qu'ils absorbent dans la journée, un clou chassant l'autre celà les vide, ils font de magnifiques crottes blanches, je les fait jeuner en les réveillant tous les matins de la même manière pendant trois à quatre jours en les nettoyant bien de toute trace de farine.. et le samedi suivant je les cuisine avec la coquille six bains successifs de dix minutes (après début d'ébulition) avec bouquet garni, et nettoyage à la brosse entre chaque bain, dans une eau non salée changée chaque fois, pendant ce temps je passe le pain, l'ail, et le persil le sel à la moulinette, je fais des poches de 50 escargots avec deux poignées de pain, et je congèle de suite. Pour les déguster, placer les escargots à l'envers dans une poêle verser du beurre salé fondu sur les coquilles, mettre le pain, et faire chauffer à feux doux en agitant de temps à autre, consommer chaud. Cuisinés de cette manière ils sonts tendres et fondants.Bon appétit!

Comme tous les messages précédents je ne peux que féliciter l'auteur du site présent d'avoir mis à la disposition des amateurs la somme de ses connaissances et expériences. Depuis deux ans, après avoir ramassé quelques dizaines d'escargots dans mon jardin, j'ai eu l'idée d'en faire l'élevage (des petits gris). Ceci dans un enclos grillagé de 2 m2 en les protégeant l'hiver. Jusqu'à ce jour, faute de connaissance(s), le résultat est médiocre avec cependant une modeste reproduction qui a suffit à ma consommation personnelle. Etant maintenant plus éclairé, j'espère obtenir de meilleurs résultats... et aussi essayer différentes recettes culinaires. Merci donc pour les lumières que vous m'avez apporté. Georges.

J’en ai ramené près de 200 que j’ai préparés selon vos conseils. Las ! Déception, ils n’avaient ni le goût ni la consistance des escargots que ma mère nous préparait quand j’étais enfant au Maroc. J’ai téléphoné à ma mère. Pour elle (ma mère est espagnole, et elle est très âgée) l’explication est simple : les escargots français sont des escargots " de bourgogne ". Ils sont trop gros, il ne faut en garder que le " pied ". Mais elle ne sait pas faire. En plus c’est la mauvaise saison. Les meilleurs escargots se ramassent en avril. Pour mon père, les bons escargots sont les " tchiou ", des petits escargots de Provence qui, dès qu’on les touche, se cachent dans une mousse qu’ils fabriquent avec ce bruit caractéristique. Selon mon père quand il était enfant en Provence, on les mangeait crus dans les champs comme remède au rhume, et comme fortifiant. De là plusieurs questions - Les escargots trouvés dans la nature en France sont-ils d’espèces différentes et doivent-ils être préparés différemment ? - Y a-t-il une saison plus propice comme pour les huîtres ? - Quelles sont les parties anatomiques à retirer des gros escargots. En particulier quelles sont celles qui restent croquantes sous la dent quelle que soit la longueur de la cuisson. J’en ai repéré une qui a la forme d’une poche blanche très dure et qui se termine par des petits fils. À ce propos, je trouve qu’il manque à votre site une planche anatomique - Êtes vous sûr que cinq jours à dégorger suffisent. Certains escargots semblaient contenir un peu de sable. Question subsidiaire : Pourquoi trouve-t-on, en milieu urbain (dans des haies près de parkings, ou dans un petit jardin d’une maison), de soudaines très grandes quantités d’escargots dans un espace restreint d’une trentaine de mètres alors que 50 mètres plus loin, dans un environnement minéral et végétal identique, il n’y en a aucun.

I am glad to find your site. It is hard to find anything about finding, culturing or preparing escargot where I live (on the central coast of California). It is not too hard to find escargot in resturants but often it just isn't very good. My husband thinks I am nuts and so do must of my friends but I would like to raise snails as you are doing. Where would I find the live snails to begain with?
